Almond Flour Blueberry Muffins

Ingredients:

  1. 2 cups almond flour

  2. 1/4 tsp salt

  3. 1/2 tsp baking powder

  4. 1/4 cup olive oil or avocado oil

  5. 1/4 cup real maple syrup

  6. 3 large eggs

  7. 1 tsp lemon zest

  8. 1/2 cup blueberries

Directions:

  1. Preheat oven to 350 F. Line muffin tins or spray with olive oil spray

  2. In large mixing bowl whisk almond flour, salt and baking powder

  3. Add in oil, syrup, eggs, and lemon zest. Mix until well combined.

  4. Fold in blueberries and spoon batter evenly into tins 3/4 full.

  5. Bake for 20 minutes or until centre of muffin bounces back when touched.

  6. Let cool for 5-10 minutes and enjoy. Freezes well for snacks later.

Cinnamon Swirl Banana Bread

Ingredients:

  1. 2 cups almond flour

  2. 1 tsp baking powder

  3. 2 tsp brown sugar

  4. 1/4 tsp salt

  5. 2 large ripe bananas

  6. 2 large eggs

  7. 1/4 cup coconut oil or olive oil

  8. 1 tsp vanilla

  9. 2 tbsp cinnamon- for filling

  10. 1/2 cup sugar- for filling

Directions:

  1. Preheat oven to 350 F. Line loaf pan with parchment paper.

  2. Combine almond flour, baking powder, brown sugar, and salt into a large bowl.

  3. Combine mashed bananas, eggs, oil, and vanilla into a bowl and then mix into dry ingredients.

  4. Mix the cinnamon and sugar together and set aside.

  5. Transfer 1/2 the batter into the loaf pan and then sprinkle half of the cinnamon sugar onto the batter.

  6. Add the rest of the batter on top and sprinkle the remaining cinnamon sugar mix on top.

  7. Bake for 45-55 minutes or until the centre of the loaf comes out clean with a toothpick.

  8. Let cool for 10-15 minutes.

Almond Flour Shortbread Cookies

Ingredients:

  1. 1 1/2 cups almond flour

  2. 3 tbsp real maple syrup

  3. 3 tbsp melted coconut oil

  4. 1/2 tsp vanilla

  5. pinch of salt

Directions:

  1. Preheat oven to 325 F. Line cookie sheet with parchment paper.

  2. Mix all ingredients together. Form a ball with your hand and then gentle press down with a fork.

  3. Bake for 10-12 minutes until lightly golden then let cool for 5 minutes.
